Here, we want to make saffron pasta. You may think it is tough or having a lack of motivation to do all that mixing by hand. No problem. If you have a food processor, you can have a batch of pasta dough ready in about two minutes flat.
Don’t panic if you don’t have a food processor. We will explain both ways, making pasta by hand and food processor. Making the dough by hand takes a little more time but don’t worry it doesn’t really take that much time.
1- Place flour, salt and saffron threads in the bowl of a food processor fitted with the metal blade and pulse to combine. (You can combine all the flour, salt and saffron threads in the bowl by hand or spoon if you don’t have a food processor.)
2-Add eggs one at a time and blend after each addition. Add olive oil and process until the dough looks like a coarse meal that comes together when pressed into a ball, about 10 seconds. Do not over-process. (You can use a fork to whisk the flour into the egg mixture and then knead with hands until fully incorporated.)
Note: If dry, add water. If the dough doesn’t come together after a minute and looks like small pebbles or cous cous, add a teaspoon of water and process again. Repeat until the dough comes together.
If sticky, add flour. If the dough is sticky and smears against the sides of the bowl, add a tablespoon of flour and process again. Repeat until the dough comes together.
3-Lightly dust work surface and hands with flour. Turn dough out of food processor and knead until elastic and smooth, and no longer sticky, 5 to 10 minutes. (If a food processor is not available you can knead with hands until fully incorporated. )
Note: Rest for 30 minutes. Do NOT skip this step. At this point, you can refrigerate.
4- Roll out, and take through pasta machine up to the thinnest number that doesn’t break up. Cut pasta in ribbons or make whatever shape you prefer. (If a pasta machine is not available you can use a rolling pin. Spread the dough on a flat surface and make a thin surface of the dough by rolling pin. Then cut into strips with a knife.)
5-Drying the Pasta: dry the pasta in strips on a clean cloth. This will make the pasta easier to cook and reduce the chance of sticking.
